Born in Japan, Nobu Matsuhisa was classically trained in a sushi restaurant of Tokyo before he headed to Peru. He also ventured to Buenos Aires, Argentina, Alaska and Los Angeles where he opened his restaurants, "Matsuhisa", in 1987. In 1994, New York City saw the opening of "Nobu" in partnership with actor Robert DeNiro. Los Angeles Times Magazine named Nobu one of Southern California's Rising Stars in 1998, the James Beard Foundation inducted Nobu Matsuhisa into Who's Who of Food and Beverage in America in 2002 and have also nominated Nobu Matsuhisa for Outstanding Chef in 1997, 1999, 2000, 2001, 2002, 2003, and 2004. Nobu Matsuhisa has restaurants in more than ten different cities around the world. Born in the fishing village of Scarborough, Thomas Buckley worked with such luminaries as Daniel Boulud, Ferran Adria, and Jean-Georges Vongerichten before joining Nobu Matsuhisa for a six-year span with his elite company, including a senior sous-chef position at Nobu London. Buckley has been executive chef at the Miami outpost of Nobu since its opening in 2001. Photographer Masashi Kuma was nominated for a James Beard Award for his photography in the Kodansha published Kaiseiki: The Exquisite Cuisine of Kyoto's Kikunoi Restaurant.
